Maple Syrup with breakfast.

There's not too much that can beat pancakes with fresh maple syrup for breakfast at the cottage.

Most certainly, there's nothing like the taste of fresh maple syrup made from the very trees one is looking at through the window while having such a breakfast.

The weather is perfect right now for making syrup. Freezing nights, above freezing days and good sunlight.
It's been a late start this year and will probably be a very short season because we can see leaf buds forming on some of the trees.
Spring is finally arriving and after last nights hockey game, it truly must be spring because the Leafs are out :-)

The cost of maple syrup last season was around $25 per litre. Given it might be a short season for this labour intensive production the cost will most likely go up.

We better get busy making more syrup quickly this week because quite mysteriously this Mason jar that was full last night had depleted quite a bit by breakfast.

  1. How I miss the maple trees!!!!! And how awesome that you're making your own syrup. I made some a few years ago - it was so much fun and extra delicious!
